Chocolate Muffins!

Yummy chocolate treats!

Even though these are scrumptious, I wouldn't count on them being calorie-free!


Ingredients:
3 eggs
1 cup of sugar
Half a cup of milk
1 and a half cups of self-raising flour
1 teaspoon of vanilla extract
1 tablespoon cocoa powder

Method:
  1. Preheat the oven to 160c. Line a 12-cupcake pan with cupcake papers. In a medium sized bowl, lightly beat the eggs, add butter and sugar, then mix until light and fluffy
  2. Add milk, flour, vanilla extract and cocoa powder, and stir to combine. Beat with an electric mixer for 2 minutes, until light and creamy.
  3. Divide the mixture evenly between the cupcake cases. Bake for 20 minutes until firm to touch. Allow to cool before transferring to wire rack.

Strawberry muffins!

This is my recipe for strawberry muffins!
They follow the same recipe for banana muffins but instead of adding bananas add a few chopped strawberries :)

1.) Preheat the oven to 180c.
2.) Sift together the 200g of plain flour, half a teaspoon of baking powder, 1tsp of bicarbonate of soda and a pinch of salt.
3.) Combine a few small chopped bits of strawberry, 150g of sugar, 1 egg, and 75g of melted butter in a large bowl.
4.) Fold in the flour mixture, and mix until smooth.
5.) Bake for 25-30 mins. ( may be done in 20!)

CAKE POPS!!!

To make this cake you should use the recipe for basic Victoria Sponge. I also added my own special twist... CHOCOLATE SPREAD! It may sound silly but just wait until you try it!
